Ingredients

  • 2 large zucchinis (about 500 g / 4 cups cut into sticks)
  • 2 large eggs, beaten
  • ½ cup panko breadcrumbs (about 60 g)
  • ¼ cup grated parmesan cheese (about 30 g)
  • All-purpose flour, for coating
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika or dried herbs (oregano, basil, or Italian seasoning)
  • Olive oil spray, for cooking

 


Instructions

  1. Preheat the air fryer to 375°F (190°C) and line the basket with parchment paper.
  2. Cut the zucchini into even sticks, about the size of classic fries.
