  • Salt and pepper
  • Optional: parsley or cumin
  • Olive oil

Instructions

  1. Peel and grate the carrots, potato, and onion.
  2. Place the grated vegetables in a clean towel and squeeze well to remove excess moisture.
  3. In a large bowl, combine the grated veggies with the eggs, cheese, panko, olive oil, salt, pepper, and optional herbs or spices.
  4. Mix until the batter holds together — if it’s too wet, add more panko.
  5. Form about 12 fritters and place them on a baking sheet lined with parchment paper.
