Description
These homemade healthy peanut butter cups are made with just 3 ingredients: dark chocolate, creamy peanut butter, and a touch of honey.
Ingredients
- 100 g (½ cup) peanut butter – creamy or natural unsweetened
- 2 tbsp honey – or maple syrup
- 150 g (5 oz) bittersweet chocolate – 60–70% cocoa
- a pinch of sea salt flakes on top – optional
Instructions
- In a bowl, mix peanut butter with honey (or maple syrup) until smooth.
- Melt the chocolate in a heatproof bowl, either in the microwave or over a double boiler.
- Line a muffin pan with paper liners. Add a thin layer of melted chocolate to the bottom.
- Spoon the peanut butter mixture on top, then cover with the remaining chocolate.
- Place in the freezer for 15 minutes until firm. Remove liners and enjoy.
Notes
Storage: Store in the fridge up to 1 week in an airtight container. Freeze for up to 1 month. Let sit at room temperature for a few minutes before eating.
Tips:
- Use silicone liners for easy unmolding.
- Stir a little coconut oil into the chocolate for a smoother melt.
- Add sea salt flakes on top for a gourmet finish.
